The grapes of the Tempranillo and Garnacha varieties ripen perfectly under the sun of the “valley of the rocks” and the coolness of the nights in this region. Strict controls are carried out in the field during maturation to obtain a balanced wine with just the right levels of sugar and acidity. The must goes through a period of cold maceration with the skins for 2-3 days. Fermentation takes place in stainless steel tanks at temperatures of 22-24 ºC for 10 days to balance tannin’s and fruit.
