From the monitoring carried out throughout the year to our Ribera vineyards, we choose those that, due to the terrain or climatic conditions, deserve special attention to be used for the aging process. The Tinta del País variety is harvested by hand in order to obtain the maximum polyphenolic load. Normally it is during the second half of October when the bunch is still smooth and fresh.
